lazy cooks blueberry cake

Hi.......my mom got this tub of bluberries..actually blueberry pie filling..from canada....I've been using this for making muffins,cakes,tarts.everything except pies!.......Now do not despair..you remember that gorgeous jamlazy-cooks-grape-jam...the consistency is somewhat the same so you can replace with jam(if you made it)..and if you did'nt...remedy it quick..black grapes are still available!
INGRDS
1 cup self raising flour
3/4 cup butter
3/4 cup sugar
3 eggs
1 tsp vanilla essence
1/2 cup bluberry pie filling
METHOD
1.Beat the butter and sugar till light and fluffy..I use an electric beater.
2.Add the eggs one by one.
3.Add the essence and the flour,beat till the flour is mixed properly.
4.Now,with a spoon mix in the bluberry/grape jam.......I wanted some buttery pcs to come through.
5.Pour in a buttered and dusted..aka..prepared cake pan.....bake at 180 degC for 30 mins...check with a skewer if the cake is done.
6.Cut into slices and enjoy with a hot cup of coffee.or with cold coffee..or with tea..or just like that!





NOTE:you can do away with the extra stuff(blueberries/jam)and just ad 1/4 cup of milk..beat well and bake..you'll get a super vanilla cake.
