lazy coooks banana walnut cupcakes

 Hello there people....I had a real fun evening yesterday..A whole bunch of friends ,my kitty party crowd (ahem)  had come over for tea...well I had invited them,it was my turn to host the party and it was great...girl bonding rocks!.I had the tea..savoury stuff catered (shame on me!!!!!!being a food blogger and all..you can't see me but I've hung my head in shame!)..that left the sweet stuff for me.I did a dark chocolate cake..and these cupcakes.These are really good and get done in a jiffy.

INGRDS
2 cups APF(maida)
2 tsp baking pdr
50gms butter(melted)
1/4 tsp sugar
1 egg
1 cup milk
1 over ripe banana
1 tsp vanilla essence
For the topping
1 cup chopped walnuts
1/2 cup brown sugar
1 tsp cinnamon powder.
METHOD
1.Mix the topping ingrds together.
2.Sieve the flour with the baking pdr.
3.Put the banana,egg,milk and melted butter and essence in the blender..and blitz for a few seconds..DO NOT make a shake..it just needs a few seconds....
4.Pour the banana mix onto the flour..mix.
5.Add 1/2 the topping mix...mix again..and fill up the cupcake wrappers till 2/3.
6.Now add 1 tsp of the leftover topping on all these beauties...bake at 180degC for 15-20 mins.
7.Serve...no other beautification necessary.Cheers...girls..looking forward to many more evenings together.

lazy cooks banana bread

Banana is one of those spellings,that once you start..you wonder where to stop!..I do each and every time(wonder that is).Hello everyone..this is a really easy banana bread and one of my all time favourites for baking when I feel like doing nothing.....its that easy.
INGRDS
1.3 ripe bananas
2.2/3 cup sugar
3. 2 eggs
4. 1/2 cup oil
5. 1 1/2 cups flour(maida)
6. 1/2 tsp each of salt,baking pdr and cinnamon
7 1/4 tsp baking soda
8. 1/2 cup chopped walnuts
METHOD
1. Take ingrds 1-4 and put them in your blender...blend away.
2. Take the rest of the stuff , sieve it together then add the chopped walnuts.



3. Pour the wet stuff onto the dry stuff,mix well and pour into a greased and floured loaf tin.....bake at 180deg C for 45mins(till a skewer inserted in the cake comes out clean).

lazy cooks malty walty banana cake.

Hi.......i baked this banana loaf  cake ,coz i had overripe bananas lying in my freezer,a la nigella lawson!Actually i tried it for the first time(freezing bananas)and i must say that though they(bananas) looked d..isg...ustin...g as they defrosted,they lent themselves very well to the cake/bread.The malt element is purely optional,but it definately elevates this to another level.
The Ingredients
3 over ripe bananas(the ones in the pic are not the over ripe ones..they looked really bad as they defrosted...these are their better looking cousins).you need one cup of mashed banana.
2 eggs
3/4 cup brown sugar
3/4 cup white sugar
1/2 cup oil(forgot to put it in the pic!)
1 3/4 cup of flour(maida...you can also use atta,but you'll have a heavier cake)
1 tsp baking soda
1/2 tsp salt
1 cup of any malted milk food(maltova,horlicks,nutramul,compleat etc etc)
1/2 cup of chopped walnuts
THE LAZY WAY TO DO IT.
1.Sieve the dry ingrds together(maida.baking soda,salt)Toss the walnuts in this.
2.Pre heat your oven,set it to 180degC.Prepare your loaf pan(smear oil/butter all over the inside of the pan then dust it well with flour)
3.In your blender jar put the rest of the ingrds(the mashed bananas,the two sugars,eggs,oil and the malted milk food)Blend till its all combined.
4.Add the product of your blender to the dry stuff.Mix till combined.Pour into the prepared tin and bake for 35 to 40 mins..till a skewer(or knife)inserted into the body of the cake comes out clean...The sides of the cake also start getting away from the tin.
5.Take it out,cut nice chunky slices and enjoy.Before i could take more pics of this it was gone!
