lazy cooks chocolate biscuits

OMG!Finally my net connection was restored..........it was extremely frustrating...........waiting...waiting..it was a case of...waiting for the storm to get over(we had a rather stormy(!) weekend....then rushing to see if the connection was back.....then again checking after sometime.....anyway....hopefully the connection will now stay!
This is  not my brainchild..........these are from the pioneer woman's website and they are out of this world!simply superb.....if you are a chocoholic..you won't be able to stop at 1...and def. dunk them in the melted chocolate..........although I had  1 or 2...ok maybe 3-4 without the extra chocolate  and they were pretty good too..........the thing is with the chocolate coating..they are mind blowing!I had halved the recipe and made it...and am kicking myself for it..should've made the full thing!
INGRDS
250 gms butter
1 cup powdered sugar
1 whole gg
2 tsp vanilla essence
2 1/2 cup flour
1/2 cup cocoa pdr
1/2 tsp salt
cooking chocolate-i used about 200 gms
  METHOD
1.Beat the butter and pdr sugar,add the vanilla essence and egg..beat  again.Add the flour,cocoa pdr salt.
2.Roll it out to 1/4 inch thickness(about a parantha thickness..lets say...pls don't bother measuring this)and cut out.........use a cookie cutter............or simply cut whatever shapes you desire.These cute little teapots....I got 3 trays out of half the recipe.
3.In a pre heated oven.190degC ..........bake for 7-9 mins.
4.After they come out of the oven..let them cool down.

lazycooks devils food cupcakes with frosting

12 in the afternoon
Hi there !Valentines day!another excuse for indulging in chocolate and frosting.This frosting is called the best frosting in the world(by missydew)..I tried it for the first time today and agree totally!Its light and wonderful,don't let the ingrds scare you.My daughter Bambi helped out with the making of the cupcakes and the decorating ..the kids were at home today because the weather was awful....and they PROMISED to study.....she decided that she HAD to help with the cupcakes and my son just had to lie flat on his back and contemplate whats up with the roof.! Studies...hah!
INGRDS
 1. 2 cups flour seived with
2. 1 tsp baking soda&1/2 tsp baking pwdr
3. 1/2 cup cocoa pdr
4. 3/4 cup boiling water.
5. 1/2 cup veg oil
6. 11/2 cups brown sugar
7. 3/4 cup of buttermilk(or if you're like me..then 3/4 cup of milk in which you add 11/2 tsp of vinegar)
8.1 tsp vanilla essence.
 METHOD
1. Mix the cocoa pdr and boiling water until smooth.
2. Sieve the flour with the b.p. ans b.s.
3. Run to preheat the oven(180deg C/gas mark 4)
4. Get your daughter to beat(with an electric whisk)the sugar,oil ,vanilla essence and eggs together.pour in the cocoa mix.
5. Now put the flour and buttermilk alternately into the mixture,mix well.
6.Prepare the muffin tin by putting the cup cake wrappers in them,then pour this cake mix till 3/4th of the wrapper
7.Bake for 25 mins or thereabouts..till a skewer comes out clean...i kin of kept stabbing them with the knife.
8.Take 'em out &let them cool.

INGRDS for the best frosting in the world!(by MissyDew)
1. 2 1/2 tablespoons flour(yes! you heard me)
2. 1/2 cup of milk
3. 50gms butter
4. 1/2 cup granulated sugar
5. 1 tsp vanilla essence
6.sprinkles
METHOD
1.Heat the flour and milk together,stirring constantly..it'll get thick..take it off the heat.
2. with an electric whisk,beat the butter and sugar together till nice an fluffy,add the vanilla.....then add the cooled milk sludge....keep beating...2-3 mins..it gets fluffier!
3. Spread on the cupcakes...or any chocolate cake...i won't call it the absolute best...that honour goes to truffle icing...but this is a real close second.
4.sprinkle some sprinkles on top.

lazycooks orange choco pots


Decadent.Divine.Delicious.Dooey(gooey actually..but i wanted the word to start with D.This has been modified from nigella lawson's choco hot pots.Now Nigella is a goddess and her recipe's are great..but we're a slightly" healthy" family...OK..i'm the "healthy" one in my house so i gotto tweak the recipe to suit me.As it is ..truth be told tweaking recipes is a bit of a failing of mine ....I added oats and wholewheat flour..so that i feel good 'bout all the calories going in.The orange marmalade,went in because orange and chocolate is a match made in heaven.
INGRDS
1. 125gms  dark chocolate
2. 75 gms butter
2. 3 eggs
4. 2 teaspoons orange marmlade(optional)
5.3/4 cup brown sugar
6. 1 tablespoon each of oats,wholewheat flour anf regular flour
7. 5 ramekins buttered lightly
METHOD
1. Melt the chocolate and butter in a double boiler(put one vessel with water to boil,put a smaller vessel on top of it not touching the water..there you have it ..double boiler,bain marie..call it what you want) 
2.Beat the sugar and eggs till nice and fluffy,add the marmalade,add the chocolatey goo.....and finally the flour and oats.
3.Pour into the buttered ramekins,put in a preheated oven at 180deg C and bake for 20-25 mins till the top looks done but there is a wobble.Wobble is good ....it hints at the absolute divinity thats going to come your way.

4. Serve hot.

lazy cooks chocolate peppermint cupcakes

Hi everyone....you know your friends are good friends when you meet after years and years and it seems like you'd met yesterday.In Mumbai on the 5th of jan i met up with an old friend  after 12 years and it was great!This one's for you Cheryl.

INGRDS
1 2 cups flour
2 1/2 cup cocoa pdr
3 1tsp baking soda
4 1/2 cup oil





5 1 1/4 cup of sugar
6 3 eggs
7 1 tsp vanilla essence
8 1 cup of butter milk(since i never have this...i simply put 2tsp vinegar in 1 cup of milk and leave it for 5 mins)
ICING
1 100 gms dark chocolate
2 100 gms cream
3 100 gms condensed milk(why not?)
4 peppermint essence..a few drops
METHOD
1.Pre-heat the oven(180degC)
2.Sieve the dry ingrds together(flour,cocoa pdr and baking soda) 
3.Beat the sugar,oil and eggs...add the vanilla essence...then the dry ingrds and the buttermilk.Beat till bubbles appear.Thereafter,put the cupcake cups in the muffin pan..and pour the mix in it till 3/4 of the cup.I find it easier to simply put it into a measuring cup and pour from there.
4. Bake for 17-20 mins.
ICING
1.Thawack the chocolate ,so that there are no big chunky bits,put in a pan along with the cream and condensed milk,put this pan on the stove on a low flame...it'll melt and come together,when it's nice n smooth take it off and add the peppermint essence(a few drops are good enough)



2.Now hold the cupcake by its bottom and dunk it in,take it out and ...sprinkle it with sprinkles real quick...and we're done.
