lazy cooks mango ice cream

Hi guys..........here I go destroying all the good will  I garnered because of those two fat free posts. This is not fat free..by a long shot but it is velly..velly goood....and velly ..velly easy. It's ice cream the way my mom used to make it(before the ice cream maker) ....Actually its a kulfi masquerading as ice cream, but, since it was called ice cream when I was little....ice cream it is!
INGRDS
condensed milk-1 tin
1 lt milk
2 slices of white bread
2 cups mango pulp
METHOD
1.Put the milk to boil in as heavy bottomed pan, till it reduces to 1/2.Add the slices of bread and condensed milk...stir a bit,let it come to a rolling boil, then take it of the heat.
2.Puree the mango pulp ,when the milk mix is cool enough to put into the blender....blend with the mango pulp(you'd probably need to do this in batches...unless you have a really huge blender!)
3.Pour this creamy mess into a freezer safe bowl..with a tight fitting lid..and freeze.
4.It's ready to serve when it sets!
NOTE
1.See me trying to cut some calories!........if you want ,when you're pureeing the whole mix together.you can add a cup of cream..I didn't and it still tasted great.
2.If you want a few drops of colour can be added......I didn't add coz I  wanted this to be totally natural(OK...who am I kidding.....I forgot)
3.If you wait 24 hrs to serve this...then you'll need to put your bowl in the refrigertator for a bit to soften the ice cream.

lazy cooks chocolate salami

Hi guys...........howz you doing?Vegetarians.. .  ..stick around, there's no meat in this recipe..only lots and lots of calories....but we don't care..right?Whats a few calories between friends?I had done this for a friends daughter's birthday party...along with the birthday cake(pictured below)....long story short..my kids were shocked to see the entire roll of chocolate salami leaving the house..without them getting some..if not all!!!
doggy on a diet!not a happy fella:(
So here I am .....or rather here it is...I made it again.....there's another reason that I decided to do this today...my dog(casper)has been put on a diet by the vet.I told my hubby that the vet is an army officer used to army dogs..their levels of fitness differ.....but  NO..hubby doesn't agree and my poor dear is on a diet...no snacks for him,no biscuits...no baked goodies..just his food! How sad is that?.look at his sad ..sad face!.............
Onto the recipe...I normally would've used cashew biscuits...but since I can't give casper anymore digestive biscuits(he loves them)I decided to use these in the chocolate salami..that way I am not tempted to give him a tiny little bite ......chocolate is supposed to be like poison for dogs.
INGRDS
1 tin of condensed milk
200 gms of any rich biscuit
100 gms of butter
walnuts/cashewnuts(1/2 cup each)
2 1/2 cups.dessicated coconut plus 1/2 cup more for dusting and rolling the chocolate salami
 3 tablespoons cocoa powder
METHOD
1.Put every thing in a heavy bottomed pan.....after roughly pounding the biscuits with a rolling pin....you can guess who i thought was at the other end of the rolling pin..........NO...not my hubby....the vet!
the butter has still not melted
the mixture 's come together
2.Heat it till the butter melts and everything sticks together....you keep adding the dessicated coconut..till the mix comes together. Now break off portions ,I normally go with half the mixture at a time.At this stage you need to knead(heh...heh)the mixture...spread some dessicated coconut on the slab and knead away..then roll it into a log shape.
after the kneading.
.On some clingfilm...spread dessicated coconut again, put one log in..and roll tightly...put in ther refrigerator to cool down.........at least for 2 hours.

going into the refrigerator

the cake.

for a very sweet little girl.
4. Thereafter take it out of the fridge, remove the clingfilm..and cut into thin slices.. that's all.All those who asked for the recipe yesterday...here it is..do tell me when you try it out:-).

this is an old and grainy photograph..we're not THAT old!
INGRDS
1 2 cups flour
2 1/2 cup cocoa pdr
3 1tsp baking soda
4 1/2 cup oil

5 1 1/4 cup of sugar
6 3 eggs
7 1 tsp vanilla essence
8 1 cup of butter milk(since i never have this...i simply put 2tsp vinegar in 1 cup of milk and leave it for 5 mins)
ICING
1 100 gms dark chocolate
2 100 gms cream
3 100 gms condensed milk(why not?)
4 peppermint essence..a few drops

2.Sieve the dry ingrds together(flour, cocoa pdr and baking soda)
3.Beat the sugar, oil and eggs...add the vanilla essence...then the dry ingrds and the buttermilk.Beat till bubbles appear.Thereafter, put the cupcake cups in the muffin pan..and pour the mix in it till 3/4 of the cup.I find it easier to simply put it into a measuring cup and pour from there.
4. Bake for 17-20 mins.
ICING
1.Thawack the chocolate ,so that there are no big chunky bits, put in a pan along with the cream and condensed milk, put this pan on the stove on a low flame...it'll melt and come together, when it's nice n smooth take it off and add the peppermint essence(a few drops are good enough)

2.Now hold the cupcake by its bottom and dunk it in,take it out and ...sprinkle it with sprinkles real quick...and we're done.
