lazy cooks victoria sandwich cake in a hurry


Hi there!Maybe not the actual victoria sandwich......i will do that in a few days and post it as the original victoria sandwich.This is a recipe of a hot milk sponge cake i got from my sister(from the cooking manual of the toshiba oven).its a really nice cake to do in a hurry.and it takes just a tablespoon of butter!how nice is that?Though ,you'll realise as we progress further into the recipe..i'm hardly counting calories!(i should i know..but what to do?)
INGRDS
1.I cup flour sifted with
2. 1 tsp baking pdr
3. 1 cup sugar
4. 1 tablespoon butter
5. 2 eggs
6.1/2 cup milk
8. 1 1/2 tsp vanilla essence
METHOD
1.Pre heat the oven.Prepare the cake tin(butter it first..then lightly dust it with flour)
2.Heat the milk..add the butter to it .
3.Into the blender,put the sugar,eggs ,essence..blend....put the milk in blend again.
4. Pour this onto the flour,mix well and pour into the prepared baking pan.
5.Into the oven at 200degC FOR 10mins then reduce it to 180degC for another 15-20 mins....put a skewer in ..if it comes out clean..the cake is don.(i normally put a knife in!)






6.Once it cols down ...you can cut and serve it....however..you can also slice the cake in half....beat up some jam..spread generously...put the top back on(of the cake..of the cake)...dust with icing sugar and we're done!  NOW cut and serve slices.so much better!

nepali potato salad

Hi!Nepali cuisine is pretty similar to ours(varied though ours may be from one end of the country to the other)....anyway i noted a couple of recipes down from nepalicuisine.com and this is the first of the lot.Though i tried to stick to the given recipe as much as possible...i just could'nt get myself to use the amount of oil they advocated..that was the only thing i changed....the oher thing that i will do the next time is opt either for the red chilli pdr. or the green chilli..because both together did make things a bit fiery.
INGRDS
1.4 medium sized potatoes..boiled and cubed
2.4 tablespoons sesame seeds(roasted and ground)
3. 1 green chilli finely chopped(i would make this optional) 
4. salt to taste
5 3/4 tablespoon lemon juice
6.4 tablespoons sesame oil(i just could'nt...i used less than 1 tablespoon)
7.1 tsp chilli pdr
8.2 tsp veg oil(i used 1 tsp)
9.pinch of asfoetida(hing)
10.8-10 fenugreek seeds
11. 3 tablespoons chopped cilantro.
METHOD.
1.Mix the sesame pdr.salt,red chili pdr,green chilli and lemon juice..add the oil..mix well.Toss the potato cubes in this.Add the cilantro..toss again.
2.Heat the veg oil..add the hing and the fenugreek seeds  ..then pour this on the potato salad.



3. Serve.......though its supposed to taste better the next day..i will not know since its all over!Maybe the next time i will make it and keep hidden for a day:)

lazy cooks easy peasy peas

These are nice and quick to do........they taste great as a side dish or then as a stuffing in whatever you wish...in samosas,phyllo pastry parcels,slices of bread......whatever.
INGRDS
1. 2 cups peas(fresh would be the best!)
2. 1 medium onion chopped fine
3. 1 1/2 inch cinnamon stick(don't bother measuring this..you just need some cinnamon stick)
4. 1 1/2 teaspoons olive oil
5. salt and freshly ground black pepper.
METHOD
1.In a heavy bottomed pan.(wok..kadai),heat the oil and add the cinnamon stick..then ad the chopped onion...fry till the onion turns transparent.
2. Add the peas and the salt and pepper.Lower the heat to low-medium.Cover with a tight fitting lid(in my case ..a plate),.....check after 10 mins..the peas should be cooked.




3.Thats it..serve hot.or cold ..they taste fine either way!

lazy cooks bread and cheese bake

Hello people..how are you?This was dinner last night.My mom used to make it and I really love it.Hubby dear ai'nt here...  which is why I made it....he wouldn't have touched this..even if his life depended on it!For him the food has to be SPICY.. ..the hotter the better...this dish is bland...flavourful but bland.So if you're like the man i married and don't like bland food.....this post is not for you.Those of you who are still around..this is nice and cheesy..and tastes great with some tomato sauce(lycopene again!..which is really good for you)
RINGRDS
1.Bread slices..i used a garlic loaf..but any bread would do..multigrain would be the best
2. 3 eggs
3. 200ml milk
5. 100 gms grated cheese
5. 1/2 tsp mustard pdr(optional)
6. salt and freshly ground pepper to taste.
7. a pat of butter
8. 4 tomatoes cut into slices

METHOD
1.Butter your baking dish.pre heat the oven(180 deg C).
2. Beat the eggs ,add the mustard..salt and pepper..then add the milk and beat again.
3. Layer the bread,put a layer of tomatoes,some freshly ground black pepper,then half the cheese.Then repeat the process....after that pour the milk mixture onto the bread n cheese.Now put this into a hot oven(if you want you can let it rest for a while before putting in the oven)Bake for 45min-1 hour...till a skewer inserted into the dish comes out clean.


5.Serve hot....with tomato sauce.We had it with the easy-peasy-peas   and some really nice chicken salami......and tomato sauce!

lazycooks eggless triple chocolate cookies

Hello all.....I hope you had a great valentines day!.murmuring sweet nothings and enjoying all the sweet goodies!My day was pretty crazy,had to go on a two hour bus journey(one way) to Jammu,stand in ahopelessly long line at the passport office,argue...argue and argue with those people....the silver lining was meeting up with my friend Lucy(hi !Lucy),we had coffee and then she took me to this place where i could pick up choco chips(thanks).anway then a tiring journey back...helped hubby dear get his stuff into a bag and waved bye-bye....he's gone on TD(out of station)...made maggi for the kids and me..thats it.To make up for all of the above..I made these cookies(got to keep the blood sugar levels up).couldn't have asked for a better pick me up!The recipe is the same as lazy-cooks-triple-chocolate-cookies ,but i decided to do away with the egg and add nutella instead.
INGRDS

1.1 cup whole wheat flour(atta)
2.1/2 cup oats
3.100 gms butter
4.1/2 cup brown sugar
5. 3 tablespoons nutella
6. 1 tsp vanilla essence
7.1 tsp baking soda
8.1/4 cup dark and white chocolate chips each.
9. 2 tablespoons of milk
METHOD
1.Beat the butter and sugar,add the vanilla essence and nutella..lick spoon....mmmm.nutella is divine!sorry....beat again...now add the wholewheat flour(you should've sieved the baking soda and flour together),oats and the choco chips.My mixture wasn't coming together..so i added a little milk.
2.Prepare your baking tray..if you have parchment paper..then use that..or else simply butter the tray..then use your hands to make walnut sized balls and put 'em on the tray.
3. Put the cookies into the oven..bake for 12-15 mins...then enjoy a cookie with a cup of coffee,then after your food..then with tea..you get the idea?




4.Though i really loved the cookies..i think the original recipe which has 1 egg in it is a little better....thats just my humble opnion.

lazycooks devils food cupcakes with frosting

12 in the afternoon
Hi there !Valentines day!another excuse for indulging in chocolate and frosting.This frosting is called the best frosting in the world(by missydew)..I tried it for the first time today and agree totally!Its light and wonderful,don't let the ingrds scare you.My daughter Bambi helped out with the making of the cupcakes and the decorating ..the kids were at home today because the weather was awful....and they PROMISED to study.....she decided that she HAD to help with the cupcakes and my son just had to lie flat on his back and contemplate whats up with the roof.! Studies...hah!
INGRDS
 1. 2 cups flour seived with
2. 1 tsp baking soda&1/2 tsp baking pwdr
3. 1/2 cup cocoa pdr
4. 3/4 cup boiling water.
5. 1/2 cup veg oil
6. 11/2 cups brown sugar
7. 3/4 cup of buttermilk(or if you're like me..then 3/4 cup of milk in which you add 11/2 tsp of vinegar)
8.1 tsp vanilla essence.
 METHOD
1. Mix the cocoa pdr and boiling water until smooth.
2. Sieve the flour with the b.p. ans b.s.
3. Run to preheat the oven(180deg C/gas mark 4)
4. Get your daughter to beat(with an electric whisk)the sugar,oil ,vanilla essence and eggs together.pour in the cocoa mix.
5. Now put the flour and buttermilk alternately into the mixture,mix well.
6.Prepare the muffin tin by putting the cup cake wrappers in them,then pour this cake mix till 3/4th of the wrapper
7.Bake for 25 mins or thereabouts..till a skewer comes out clean...i kin of kept stabbing them with the knife.
8.Take 'em out &let them cool.

1. 2 1/2 tablespoons flour(yes! you heard me)
2. 1/2 cup of milk
3. 50gms butter
4. 1/2 cup granulated sugar
5. 1 tsp vanilla essence
6.sprinkles
METHOD
1.Heat the flour and milk together,stirring constantly..it'll get thick..take it off the heat.
2. with an electric whisk,beat the butter and sugar together till nice an fluffy,add the vanilla.....then add the cooled milk sludge....keep beating...2-3 mins..it gets fluffier!
3. Spread on the cupcakes...or any chocolate cake...i won't call it the absolute best...that honour goes to truffle icing...but this is a real close second.
4.sprinkle some sprinkles on top.

lazy cooks masala potatoes

Hi folks.......couple of things i needed to clarify to my fellow food bloggers...if i come to your post be rest assured that i will put a comment there....however there are a few bloggers on whose posts i am just not able to comment...no matter what i try...i hope this issue (with the server)gets sorted out soon..and we can get back to normal.Secondly for all the followers of my blog...i've linked up a facebook link on the sidebar.would you please be sweethearts and "like" that.this is just so that i don't loose all of you once this GFC(which is where you all joined) gets discontinued...its a rumour...but you never know!thank you ...your support and encouragement means a lot to me....and i do not say this lightly.
 Onto the potatoes....this is a dry preparation...serve it as a side dish,make sandwiches and toast them(my kids love this....great for the morning tiffin)....or sprinkle some lemon,shove in some toothpicks and voila ..a cocktail snack.
INGRDS
1.6 medium sized potatoes(boiled and cubed)
2.1 tablespoon of corriander powdr
3.1 teaspoon each of garam masala,fennel pdr,freshly roasted(i insist) and ground cumin pdr
4.1/2 teaspoon each of turmeric pdr,black pepper pdr,red chilli pdr and ginger pdr
5.1 tablespoon of ghee(clarified butter)...for those who just shuddered violently...use 1tsp of olive oil instead...but ghee is any day tastier.
6.salt to taste


METHOD
1. In a heavy bottomed pan,heat the ghee..add the masalas..stir for a min,toss in the cubed potatoes...sprinkle a little(just a little)water ...toss away till the potatoes heat through and the masala is clinging onto them.....that is all.
2.Chop some fresh cilantro...garnish and serve!
