lazy cooks mango cupcakes

Hi guys.....we're drowning in mangoes..which is a good thing....I think it would be a very rare,thin person who doesn't like the king(why not queen?)of fruits.The mango is going in everything,salads,pasta(yes!..recipe soon),desserts,drinks and cake .I made cupcakes...but you can bake this like a regular cake(I just happen to LOVE cupcakes)
INGRDS
1 1/2 cups of all purpose flour
1 1/2 tsp baking pdr
1/2 tsp baking soda
1/4 tsp salt
1 cup mango puree
1/2 cup oil
1 cup sugar
3 eggs
1 tsp vanilla
FOR THE WHIPPED CREAM
whipping cream-1 cup
mango puree-1/2 cup
METHOD
1.Sieve the flour with the baking soda,baking pdr and salt.
2.Beat the oil,sugar ,eggs,vanilla essence and mango puree together(I used my handy blender)........pour this onto the dry ingrds...mix...then either pour into a prepared pan(buttered first,then dusted with flour)...or put the cupcake wrappers in the muffin pan...and fill each cupcake wrapper till 3/4th full.
3.Bake at 180 deg ,for 20-25 mins(cupcake time...........a cake will take longer)..till a skewer comes out clean(stick a skewer into the cupcake,and if it comes out clean ..the cake is done)
4.Take them out of the oven...and let them cool.
FROSTING
Whip the cream till soft peaks form(about 7 mins with an electric beater),now mix in the mango puree.Put into an icing bag fitted with a star nozzle and ice the mango beauties.
IMPORTANT




Keep refrigerated.........unless you're somewhere..where the temp is around 7 degrees...then you can leave it outside....if you are in a place thats so cool can I visit you?..huh...can I?...I'm kinda roasting in this place!

lazy cooks spinach souffle




Hi there........first and foremost..THANK YOU....all those who wished me luck with my assignments(I really needed it)..and all those who took the time out to write a comment...I love you guys!I really... really do..........an update on my studies is that I now have to submit all the stuff in sept. and give the exam in dec...so I'm back!......I seriously wonder if I'M in my right mind(for taking on the added stress of studying).I'm no spring chicken..heck I'm going to be 40 this dec...the big four O....I studied when  was younger..honest..I was a pilot(cross my heart)..I can't get my kids to study..and here I am with books coming out of my ears! .....anyway I signed up(read...hubby had to cough up money for the course)..so I guess I got to go through with it!
Now onto the recipe...this is really easy to do..this was one of the side dishes when I had some friends over for dinner.The pic ain't pretty..but the taste is good ..trust me.
INGRDS
1 cup spinach puree...(wash a bunch of spinach leaves..300gms...put 2 cloves of garlic,a 1/2 inch pc of ginger..and shove the whole thing in the microwave for 3-4 mins..then simply let it cool down and blitz)
3 eggs
100 gms cheese(i did a 50-50 mix.....cheddar..and pizza cheese.as we don't get mozzarella here)
1 tetra pack cream(200 gms)
salt and pepper to taste
1 tsp mustard paste.
METHOD
1.Beat the eggs,add the cream,cheese ,spinach puree,mustard paste,salt and pepper.....
2.Pour into an ovenproof dish....I used to bake this at 180deg for an hour..this time I put it in the microwave (at max)..for 12 mins.
3.It tastes good served..hot...or cold or at room temp.

lazy cooks eggless grape mousse


Hello all!..........I missed you all sooooooo very  much.I've been MIA for about 3 weeks now due to unavoidable circumstances...for almost a week we had no net   
my parents..40th wedding anniversary
connection(so?..what else is new!)..then I pushed off to delhi to meet up with my parents who were down from canada for 3weeks..to celebrate their 40th  wedding anniversary.......Also I was the small town rat who goes to the city and is completely bowled over by everything(look at the buildings!...look at the cars..omg..so many people !)..just kidding..I spent all my time in the mall..shopping..shopping ..and more shopping!After I got back to my little mountainous abode,I got busy doing the winter summer changeover...you know putting the winter stuff away and taking out the summer stuff....pretty time consuming esp if along with the viral you get struck down by lazities(a form of being lazy where you just read a novel and ignore the mess around you)..anway all done..my cupboards are set..I should take their picture..my cupboards will never look so neat for the rest of the season!I did realise one thing ..I need to enroll in the 12 stepshopping de addiction programme..I'm a shpoholic..but I promise to change..........no more shopping for anything!...well....if its really really nice..only then!
I have missed a lot from all my fellow food bloggers...I will get to all your blogs..slowly but surely!
Onto the recipe...........this is from my mom's handwritten recipes from the 70's.....tried it out and it turned out great.Black grapes are still available..so do try this out........ ..   and since it now comes from my kitchen ..you can be sure that its easy
INGRDS
250 gms black grapes
2 tablespoons sugar
1/2 tin condensed milk
200 gms cream(1 tetra pack)
2 heaped tsp gelatine
FOR THE GLAZE
1/2 cup grapes
2 tablespoons sugar
1/2 cup water
1 tsp gelatine
METHOD
1.Cook the grapes in 1 1/4 cups of water with the sugar for 15 mins....cool...blitz in a mixer and strain the puree.
2.Add the condensed milk and cream ...mix well.
3.Dissolve the gelatine in 1/2 cup water(heat it till it dissolves)..add to the grape mix.Set in the fridge.
FOR THE GLAZE
1.Heat the grapes ,sugar and water for 10 mins....cool,blend and sieve.
2.Dissolve the gelatine in 1/4 cup of water..add to the grape mix........pour the glaze in the set base....back in the refrigerator for at least an hour.









Serve .........n........enjoy this gorgeous purple dessert.

lazy cooks chocolate peppermint cupcakes

Hi everyone....you know your friends are good friends when you meet after years and years and it seems like you'd met yesterday.In Mumbai on the 5th of jan i met up with an old friend  after 12 years and it was great!This one's for you Cheryl.


this is an old and grainy photograph..we're not THAT old!
INGRDS
1 2 cups flour
2 1/2 cup cocoa pdr
3 1tsp baking soda
4 1/2 cup oil





5 1 1/4 cup of sugar
6 3 eggs
7 1 tsp vanilla essence
8 1 cup of butter milk(since i never have this...i simply put 2tsp vinegar in 1 cup of milk and leave it for 5 mins)
ICING
1 100 gms dark chocolate
2 100 gms cream
3 100 gms condensed milk(why not?)
4 peppermint essence..a few drops
METHOD
1.Pre-heat the oven(180degC)
2.Sieve the dry ingrds together(flour,cocoa pdr and baking soda) 
3.Beat the sugar,oil and eggs...add the vanilla essence...then the dry ingrds and the buttermilk.Beat till bubbles appear.Thereafter,put the cupcake cups in the muffin pan..and pour the mix in it till 3/4 of the cup.I find it easier to simply put it into a measuring cup and pour from there.
4. Bake for 17-20 mins.
ICING
1.Thawack the chocolate ,so that there are no big chunky bits,put in a pan along with the cream and condensed milk,put this pan on the stove on a low flame...it'll melt and come together,when it's nice n smooth take it off and add the peppermint essence(a few drops are good enough)



2.Now hold the cupcake by its bottom and dunk it in,take it out and ...sprinkle it with sprinkles real quick...and we're done.

lazycooks butter paneer a la pai angle's

hello everyone..while in goa we bumped into an old school friend of my husband's.Friends who treated us like family,really really nice folks....This recipe was given by them....i came back to udhampur and tried it out....its super easy and its really good.Their version did not have the ginger garlic green chilli(thats just my punjabi genes rearing up)...and their version had tomato juice instead of tomato puree(in the mountains i don't get everything.....so i had to use the puree!......but if you get the juice please use that).This is finger licking good-i promise you that.
INGRDS
1.300gms paneer
2.amul butter(brand loyalty)
3.1 tetra pack of cream(200 gms)
4.Tomato puree(use tomato juice if available)
5 salt and white pepper to taste
6.totally optional-ginger,garlic and green chilli paste
METHOD
1.In 1  tablespoon of butter ,fry the ginger,garlic green chilli paste(2 teaspoons),till its lightly brown.
2.Add 100gms(1/2 tetra pack)of the puree,add 1/2 tetra pack of cream(100 gms),1/2 cup of water,salt and white pepper to taste(you can add 1 tsp of sugar),mix it all really well....then add the paneer pieces,cover and cook for 10 mins.
3.Garnish with corriander leaves....and serve!
4.You can make the gravy and add tandoori chicken to it.............butter chicken!
