nepali potato salad

Hi!Nepali cuisine is pretty similar to ours(varied though ours may be from one end of the country to the other)....anyway i noted a couple of recipes down from nepalicuisine.com and this is the first of the lot.Though i tried to stick to the given recipe as much as possible...i just could'nt get myself to use the amount of oil they advocated..that was the only thing i changed....the oher thing that i will do the next time is opt either for the red chilli pdr. or the green chilli..because both together did make things a bit fiery.
INGRDS
1.4 medium sized potatoes..boiled and cubed
2.4 tablespoons sesame seeds(roasted and ground)
3. 1 green chilli finely chopped(i would make this optional) 
4. salt to taste
5 3/4 tablespoon lemon juice
6.4 tablespoons sesame oil(i just could'nt...i used less than 1 tablespoon)
7.1 tsp chilli pdr
8.2 tsp veg oil(i used 1 tsp)
9.pinch of asfoetida(hing)
10.8-10 fenugreek seeds
11. 3 tablespoons chopped cilantro.
METHOD.
1.Mix the sesame pdr.salt,red chili pdr,green chilli and lemon juice..add the oil..mix well.Toss the potato cubes in this.Add the cilantro..toss again.
2.Heat the veg oil..add the hing and the fenugreek seeds  ..then pour this on the potato salad.



3. Serve.......though its supposed to taste better the next day..i will not know since its all over!Maybe the next time i will make it and keep hidden for a day:)

lazy cooks scotch eggs

Why scotch eggs?Are they scottish?God alone knows......and probably Wikipedia...what I know is that I' ve grown up eating them...and now my kids are growing up eating them!These can be made with a mincemeat covering(infact then they would be genuine scotch eggs),I however mostly do these with a covering of nice and flavourful mashed potato
INGRDS

1. 5 hard boiled eggs..shelled.
2. 5 boiled potatoes
3. 1 medium sized onion finely chopped
4. 1 green chilli finely chopped
5. 2 tablespoons of finely chopped cilantro
6. 3 cloves of garlic finely chopped
7. 1/2 inch pc of ginger finely chopped
8.2 slices of bread soaked in water and squeezed dry
9.cornflakes(powdered)
10. 1 egg
11.salt and pepper to taste


METHOD
1.Mash the boiled potato,add everything to it(onion,green chilli,ginger,garlic,cilantro,bread,salt and pepper)....mash away.
2.Now divide the mix into 5.Cover a boiled egg with this mix...now cover the rest of them


3.Beat the  egg well in a bowl..then take these mammoth covered eggs,roll in beaten egg....then roll in crushed(powdered )cornflakes(I prefer the taste of cornflakes..you can def. use breadcrumbs..whatever rocks your boat)..then deep fry in hot oil,drain on absorbent paper and serve with coleslaw and sausages!

lazy cooks methi pulao

Hi everyone!I made this for lunch yesterday..along with some chettinad chicken.This is pretty easy to do,really healthy..and tasty.
INGRDS
1. 2 cups rice(i use basmati),washed and soaked in water for 1/2 an hour.
2. 2 cups methi(fenugreek) leaves washed and chopped fine.
3. 2 medium sized potatoes chopped into small cubes.
4. 3 mediun sized tomatoes chopped fine.
5. 8 cloves of garlic,pound together with 1 green chilli
6. salt to taste,1/2 tsp each of tumeric,black pepper and chilli powdr and 1 heaped tsp of corriander powder
METHOD
1. In a kadhai(a wide heavy bottomed wok!),add 1tablespoon of oil(any veg. oil..i usually use olive pomace),add the garlic-green chilli,fry for a few mins,as the colour starts changing add the tomatoes and the spices.Fry this well,when the masala comes together...add the methi and potato..cover and cook till the potatoes are almost done(5-7 mins).
2.Now add the drained rice and double the quantity of water,stir well..let it come to a boil,then cover with a lid,reduce the flame to mediun....and walk away.I went to take this picture.
3.After about 12-15 mins check on the rice..it should be done.
4.I garnished with some grated coconut...serve with some raita,papad and pickle........or some lovely spicy chicken.
