lazy cooks cottage pancakes

Hello people.........howz your weekend progressing?For me...(though i might crib later)I am thrilled to bits to see the sun out.....shining nice n bright,such a happy feeling!.and when I feel happy I make pancakes..... OK not true.....when I'm really happy I eat chocolate....when i'm sad I also eat chocolate!Pancakes got done coz the kids wanted to have the same for breakfast.These are not your regular pancakes..first of all I make it with whole wheat flout(atta),I add oats..and cottage cheese(paneer)These taste absolutely great with some honey. I normally just keep throwing the stuff together but today I measured everything out for you guys....here goes




INGRDS
1.3 eggs
2. 1/2 cup sugar
3. 1/2 cup milk
4. 3/4  cup wholewheat flour(atta)....you can use regular flour if you want.
5. 1/2 cup oats
6. 1 tsp vanilla essence

7. 100 gms cottage cheese crumbled(paneer)


METHOD
1.Beat the eggs and sugar together(a fork is good enough ),add the rest of the stuff(paneer...last)
2.Heat a nonstick pan(on medium heat)...ladle on the mixture...dot with some ghee(clarified butter)once the bootom looks firm enough,turn them upside down(i normally do two at one time)..cook the other side..and dish them up!This is a nice healthy breakfast option.My kids like it with honey........but a nice fruity strawberry/blueberry sauce..along with a dollop of fresh cream is pretty divine too!

lazy cooks bread and cheese bake

Hello people..how are you?This was dinner last night.My mom used to make it and I really love it.Hubby dear ai'nt here...  which is why I made it....he wouldn't have touched this..even if his life depended on it!For him the food has to be SPICY.. ..the hotter the better...this dish is bland...flavourful but bland.So if you're like the man i married and don't like bland food.....this post is not for you.Those of you who are still around..this is nice and cheesy..and tastes great with some tomato sauce(lycopene again!..which is really good for you)
RINGRDS
1.Bread slices..i used a garlic loaf..but any bread would do..multigrain would be the best
2. 3 eggs
3. 200ml milk
5. 100 gms grated cheese
5. 1/2 tsp mustard pdr(optional)
6. salt and freshly ground pepper to taste.
7. a pat of butter
8. 4 tomatoes cut into slices

METHOD
1.Butter your baking dish.pre heat the oven(180 deg C).
2. Beat the eggs ,add the mustard..salt and pepper..then add the milk and beat again.
3. Layer the bread,put a layer of tomatoes,some freshly ground black pepper,then half the cheese.Then repeat the process....after that pour the milk mixture onto the bread n cheese.Now put this into a hot oven(if you want you can let it rest for a while before putting in the oven)Bake for 45min-1 hour...till a skewer inserted into the dish comes out clean.


5.Serve hot....with tomato sauce.We had it with the easy-peasy-peas   and some really nice chicken salami......and tomato sauce!

lazy cooks veg fried rice


Hello everyone....first and foremost i have no idea what is going on with this server..there are people who take the time a d effort to comment on my posts(i love you guys)but only some of the comments are visible on my post.,the rest i see on my mail..WHY?Is there a way out?I would love to have all the comments on my post.If someone knows how to get around this problem..would you please let me know?
A chinese person may object strongly to my version of fried rice..so what i'm saying is that it may not be very authentic..but its my version and i love it.Lunch was fried rice and sticky chicken wings.
INGRDS
1. 1 1/2 cups basmati rice
2. 1 tsp vinegar
3. 2 tsp soya sauce
4. green chilli sauce
5. 1 1/2 diced veg(i had carrots,french beans,spring onions)
6. 1 inch finely chopped ginger
7. salt to taste
8. 2 eggs(optional)
METHOD
1.Wash,soak for a while..then boil the rice.After it has boiled,spread on a flat plate to dry a little.
2.In a heavy bottomed wok(kadhai),put about a 2tsp of veg oil,add the ginger and fry for a min...then add the veg,the soya sauce,green chilli sauce and vinegar.Cover and let it cook for a few mins.
3.Now add the rice and toss and toss till its well mixed....add salt to taste.


4. Make a 2 egg omelette ,add only salt.Then cut the egg into little diamonds,or whatever you want.......garnish the rice with this.

lazy cooks coffee caramel custard

Hi!My sweet tooth is going to get me into lots of trouble with the doc. real soon.I always maintained that a person can only expand so much..and no more..like reach an optimal level.(of fatness)Anyway i am proved wrong 'coz i continue to expand widthways.Sad..sad...so to cheer myself up(!)..i made this caramel custard  ...with coffee because the rest of the members in my house are coffee mad.Need i say that this is frightfully easy to do?
INGRDS
 1.450 mls milk
2. 3 eggs
3. 3 tablespoons of sugar
4. 1tsp vanilla essence
5. 1tsp(heaped)coffee powder
6. 5 ramekins
7. 5 teaspoons of brown sugar 

METHOD
1.Beat the eggs and sugar in a bowl till golden and frothy.Add the vanilla essence.
2.Boil the milk..cool it just a little then add to the sugar-egg mix,beat like crazy.Add the coffee powder(this is optional)
3.Put 1 tsp of brown sugar in each ramekin,thereafter pour the custard in these,put into a baking tray,fill up halfway with water(the tray)..into a hot oven(180degC)for 45-50 mins.( stick a skewer  into the custard..if it comes out clean the custard is done.)


4.Remove from the oven and allow to cool.Thats it..you can turn it out..or simply serve in the ramekin.yum!.and brown sugar is good for you.....as are eggs...milk is required for calcium..so all in all a pretty healthy dessert!O K..maybe not...but i feel good 'bout it.

lazy cooks methi pulao

Hi everyone!I made this for lunch yesterday..along with some chettinad chicken.This is pretty easy to do,really healthy..and tasty.
INGRDS
1. 2 cups rice(i use basmati),washed and soaked in water for 1/2 an hour.
2. 2 cups methi(fenugreek) leaves washed and chopped fine.
3. 2 medium sized potatoes chopped into small cubes.
4. 3 mediun sized tomatoes chopped fine.
5. 8 cloves of garlic,pound together with 1 green chilli
6. salt to taste,1/2 tsp each of tumeric,black pepper and chilli powdr and 1 heaped tsp of corriander powder
METHOD
1. In a kadhai(a wide heavy bottomed wok!),add 1tablespoon of oil(any veg. oil..i usually use olive pomace),add the garlic-green chilli,fry for a few mins,as the colour starts changing add the tomatoes and the spices.Fry this well,when the masala comes together...add the methi and potato..cover and cook till the potatoes are almost done(5-7 mins).
2.Now add the drained rice and double the quantity of water,stir well..let it come to a boil,then cover with a lid,reduce the flame to mediun....and walk away.I went to take this picture.
3.After about 12-15 mins check on the rice..it should be done.
4.I garnished with some grated coconut...serve with some raita,papad and pickle........or some lovely spicy chicken.

lazy cooks thai cucumber salad

Hi!Though it continues to be really cold out here......eat we must..and if its healthy....all the better!I mentioned the healthy bit because there is nothing better than having maggi,made by the roadside dhabawallah when you are surrounded by snow covered mountains and your teeth are chattering.......its pretty amazing.Seriously!
Anyway to continue.........this thai cucumber salad is refreshing,its pretty healthy and quite frankly the fussy husband loves this.I must also admit that the authencity of this dish has been done away with....cause i do not use fish sauce...i do not like it...but you feel free to add it.....(1 tsp fish sauce goes into the dressing)
INGRDS
1.1 med sized cucumber(you need to get 1 cup thinly sliced cucumber slices)
2.1/2 cup peanuts(plain....simply roast ,peel and lightly pound them)
3.1 small onion chopped fine
4.1tblsp chopped red chilli
5.2 tblsp chopped cilantro(dhaniya)
DRESSING
1.1 tblsp vinegar(or you can use lemon juice)
2.2 tblsp sugar
3.1/2 tsp salt
4.2tblsp water.
5.1/4 tsp redchilli powder
METHOD
1.Simply put all the salad ingrds ,after all the chopping..and pounding, into a biggish plastic dabba(with a tight fitting lid......or else things will get really messy!)
2.Get your dressing ready,put everything into a pan...heat till the sugar dissolves...voila...dressing ready.
3.Pour the dressing onto the cucumber and co........close the lid..shake well......taste.
4.Transfer onto the serving dish,take pictures......then serve to the waiting family members!

lazy cooks carrot cake.

Hi everyone.....HAPPY NEW YEAR........as2011 rolls to an end and we keep our fingers crossed about 2012......its time to ponder over the past year........make keepable resolutions for2012 and..........eat cake!What did you think?i'm not here to give some major gyan........this is a food blog!
 This is my mom's recipe for carrot cake.....my sister and i had plenty of this while growing up......and i make this for my children(ofcourse only when carrots are available).... .a wonderful cake.....healthy and nice...and perfect for welcoming the new year!
INGRDS
1.3 cups atta(whole wheat flour)....told ya its healthy.
2.2 cups grated carrots...healthy
3.2 cups chopped dates....same thing.(healthy!)
4.1tsp baking powder
5.1tsp baking soda.
6.1 1/2 cups sugar
7.1 1/2 cups oil
8.6 medium or 8 small eggs.
9.1tsp mixed spice
10.1 cup chopped walnuts(optional)
METHOD


1.Simply put everything in a bowl and beat till combined........isnt my moms recipe the best!
2.Preheat the oven for about 10 mins,grease and dust your baking pans..i get 3 medium sized loaf cakes......the shape doesnt matter..grease and dust whichever pan you're happy with.Bake at 180degC for approx.45 mins....basically till the cake gets done(comes away from the edges.and a skewer inserted in the cake comes out clean.)
3.Thats it.Done.......................I serve it without any icing..if you want.... some icing sugar can be dusted on top....or if you have access to cream cheese,then thats what goes on top.enjoy!

lazy cooks veg-cheese spread.


Hi everyone......after another hectic weekend,the dust finally settles on monday morning...and here i am!I made this veg cheese spread last night and kept it in the fridge.This is absolutely great for sandwiches (grilled or otherwise)...or just spreading on top of crackers for those unexpected guests.For me though....monday morning,i grilled the s/wiches and sent in their tiffins.
INGRDS
couldnt be simpler!
1.1 carrot(you need to peel and grate this)
2.100gms cheese(grated)
3.1 small onion(grated)
4.1 med sized capcicum(chopped fine)
5.1green chilli(chopped fine)(optional)
6.a handful of corriander leaves(chopped fine)
7.2 tablespoons of eggless mayo
8.1 tsp of mustard sauce
9.2tsps of tomato sauce
10.salt and pepper to taste
METHOD
1.Put all the prepared stuff into a bowl ,mix...add the salt and pepper to taste and viola!..........  all done!
2.This mix keeps just fine for a few days(in the fridge).Put it in an air tight dabba.(container)
3.My sister also added a grated apple to the mix....(she swore it tasted really good).......................any more suggestions?.............i look forward to hearing from you.

Lazy cooks apple and fig jam

hi..................this is my first post,i'm pretty nervous coz i'm pretty sure i'm doing a lot of things wrong....the recipe though is bang on.perfect these days b'coz apples are in season,oranges easily available  and dried figs again available.
This is what the jam looks like once its ready.
                          
THE ingredients
1kg apples
200gms dried figs
650gms sugar(you can go up to a kg of sugar..upto you)
250 mls orange juice(grate the zest and then take the juice out)
1tsp of cinnamon powder(optional)
Method
1.After washing and coring the apples,you can chop it up into small pcs....or you can just cut them into big chunks and throw them in the food processor with the figs.Process for 30 seconds....or like i said earlier just chop up the apples and the figs into small pcs..by hand.
2.Take this apple fig mush ,put it in a really big pan along with the grated zest of two oranges,orange juice and sugar.
3.Cook this on a medium flame for about an hour...keep stirring in between....stirring and mashing(i had to borrow my neighbours potato masher...thanks Manisha!).
4.Keep sterlized bottles ready,put the jam in the bottles.get your daughter to make the labels...let it cool down....then have some toast ready to spread this absolutely divine jam...and its healthy too...got apples,oranges, figs.
